The Tomate cocktail belongs to the culture of French aperitifs of the 20th century, in which pastis holds a central place. Its name does not refer to a fruit or a complex blend, but to the orange-red hue brought by grenadine, which contrasts with the usual milky tint of pastis when diluted with water. This simple variation perfectly illustrates the spirit of the French aperitif: a short drink, recognizable at first glance, designed to open the meal rather than prolong it.
The cocktail’s cultural context is therefore closely tied to the popularity of Pastis and Ricard, two expressions of the same Provençal anise tradition, which has become emblematic of French terraces and bars.
