Histoire
The Spritz is an iconic Italian aperitif cocktail whose origins trace back to Veneto and northeastern Italy, in the former lands of the Austro-Hungarian Empire. Its history begins in the 19th century, when Austrian soldiers and travelers found the local wines too strong and lengthened them with a little sparkling water: this was then referred to as spritzen, the German verb meaning “to splash” or “to dilute.” This simple gesture gave the cocktail its name.
Originally, the Spritz was not a fixed recipe, but a way of drinking white wine or a lighter local wine. Over time, it evolved in the Venice and Padua region, notably with the addition of bitter liqueurs such as Select, Cynar, or Aperol. The version now best known today, combining Aperol, Prosecco, and sparkling water, became established in the 20th century, especially after Aperol spread throughout postwar Italy.
The Aperol Spritz as we know it today became widely popular from the 1950s onward, then experienced a spectacular international expansion at the beginning of the 21st century. Its success rests on a simple balance of bitterness, freshness, and lightness, making it a very approachable aperitif. Served with ice cubes, it has become one of the most recognized symbols of Italian aperitivo culture.
