Histoire
The history of the Cubata is inseparable from that of the Cuba Libre, of which it is the “premium” version. The Cuba Libre was born in Havana around 1900, following the War of Independence, to celebrate the island’s liberation by mixing local white rum, cola, and lime. It is a festive, light, and simple cocktail that became world-famous.
The Cubata appeared later, mainly in Spain, to meet a desire for more complex flavors. The fundamental difference is the use of a golden or aged rum (añejo) instead of white rum. This change radically alters the drink’s profile: where the Cuba Libre is dry and refreshing, the Cubata brings notes of vanilla, wood, and caramel from the rum’s barrel aging. It is also widely served and enjoyed in Cuba itself. In bars in Havana or elsewhere on the island, it is common to be offered this version whenever one prefers a local golden rum (such as Añejo 7 años) rather than standard white rum.
It therefore exists as an upscale variation. A Cubata is served when one wants a cocktail that is rounder and less sharp than the standard mix. It is an evolution that favors the quality of the base spirit while preserving the historical structure of the original cocktail.
