Préparation
Make a hot espresso and pour it into a coffee cup without filling it to the top Froth the milk: Method with an espresso machine equipped with a steam wand - Pour the milk into a small pitcher (note that its volume will triple during the process) - Steam-froth the milk until you can feel the pitcher getting warm Method without a machine - Warm the milk slightly, then whisk it to create foam Spoon the milk foam over the espresso using a spatula or small spoon, taking care not to pour in too much liquid milk Dust with cocoa or chocolate powder You can sweeten to taste before adding the milk foam so as not to break it and spoil the presentation.
